Happy Sunday Friends!

I hope you all are having a wonderful weekend! With no built in holiday this week it’s back to a full work week, my first in two weeks since being on vacation! That means I’m prepping and planning plenty of healthy eats to keep me fueled through the week!

Monday: Mango/Tempeh/Carrot Asian Chopped Salad
Tuesday: Skillet Chicken Thighs with Mushrooms & Onions
Wednesday: Watermelon Steak Salad with Avocado, Feta & Walnuts
Thursday: Leftovers
Friday: Out to Eat
