Happy Memorial Day!

I am so very thankful for all of the men and women who have given their life for our country and freedom. This blog post sums up my feelings perfectly.

I’ll be back later today with an overview of my long weekend but first it’s time for a short meal prep and plan for the week ahead! Another short work week for me, woo-hoo! I did my meal prep early this morning so I could enjoy my full holiday.

  • Quinoa Bruschetta Salad– for Memorial Day grilling
  • Strawberry/Blueberry Fruit Salad– for lunches
  • Chopped Mango– for snacks

Monday: Bison Hot Dogs with Quinoa Bruschetta Salad
Tuesday: BBQ Grilled Chicken Skewers with Jicama Rice
Wednesday:
Thursday: Grilled Stuffed Peppers
